Ingredients:
Part One- Crust
1 cup sifted flour
1/2 cup quick cooking rolled oats
1/3 cup brown sugar, packed
1/2 cup butter (melted)
Part Two- Filling
1, 1lb can pumpkin (2 cups)
1, 13.5 oz can evaporated milk
2 eggs
3/4 cup sugar
1/2 tsp. salt
1 tsp. cinnamon (heaping)
1/2 tsp. ginger
1/4 tsp. ground cloves
Part Three- Topping
1/2 cup chopped pecans
1/2 cup brown sugar, packed
2 Tbsp. butter, melted
Directions:
Part One: Combine ingredients till crumbly on low speed of electric mixer. Press into greased 9x13 pan. Bake at 350 degrees for 15 minutes.
Part Two: Combine pumpkin mixture in mixing bowl, beat well. Pour over baked crust. Bake at 350 degrees for 20 minutes.
Part Three: Combine topping and sprinkle over baked pumpkin. Return to oven 15-20 minutes or until filling is set. Cool in pan.
Notes:
You might want to double or 1.5 the topping. Cut into 2" squares, serve with whipped cream on top.
